Before Folio Advisory, I spent four years as Restaurant Manager directly responsible for budgeting, forecasting, supplier negotiations, and cost control across a high-volume operation. Not advising from the outside. Actually in it.

I then moved into bar operations at one of Mykonos's most exclusive venues, where I saw first-hand how fast costs spiral without the right controls and what decisive action looks like when margins are on the line.

My foundation is academic as much as operational. I hold a degree in Business Administration from UniWA and a further qualification in Banking and Finance from Utrecht University which means when I look at your numbers, I'm not guessing. I understand the financial mechanics behind what I'm seeing.
